    The French pork industry can be summed up in a few key figures: 5,000 specialist producers deliver most of the 23.7 million pigs raised to some 15 abattoir/processors, which sell the bulk of the various cuts produced to half a dozen purchasing hubs and just over 200 meat curing companies. The remaining 30% (by volume) is exported.

    China has always been very mindful of its food security, which is why it has introduced a system of effective incentives for agricultural production. But today it faces a number of challenges: a reduction in farmable land, environmental crises (pollution, water shortages), changes in consumer patterns driving up demand, and farmers' low incomes. The agricultural trade deficit is growing. In response, the government is making a number of changes to its policy, such as land concentration and support for agriculture by direct payments. China is also looking to get its hands on resources abroad: after import diversification and attempts to take control of land, it is seeking to extend its companies' reach overseas.
